This lot is processed through an organic, fully artisan washed method, carried out manually at every stage:
- Selective handpicking of only ripe cherries
- Water flotation to remove defects
- Hand-operated depulping
- Controlled fermentation in traditional tanks
- Washing with fresh mountain water
- Natural sun-drying on raised beds / parabolic dryers
- Manual parchment sorting for maximum uniformity
